Potato, Tomato and Carrot Soup, or ABC soup, is one of the simplest Cantonese soups to make. It's fast, easy and also healthy, so why not try making it yourself today!
Peel the carrots and potatoes and dice the pork meat, potatoes, carrots, tomatoes and onion into 1.5 cm cubes.
Marinate the pork meat in soy sauce, cornflour, salt and oil for 15 mins.
COOKING METHOD
Add 2 litres of water to a pot and bring it to a boil over high heat.
Add in the diced carrots, potatoes, tomatoes and onions.
When it is boiling, turn the fire down to medium and simmer on medium-low heat for 20 minutes until carrots are soft.
Add in the pork, then give the soup a stir and boil for another 5 mins.
Add salt to taste and serve.
Notes
COOKING TIPS
Don't add too much potato, otherwise the ABC Soup will become starchy and cloudy.
Make sure you add in the pork only for the last 5 minutes of the cooking time. After the 5 minutes, immediately turn off the fire. This will ensure your pork are just cooked through, and it will be moist and tender.
Make sure you stir in the pork and mix well, otherwise the pork pieces will clump together. Then turn off the fire so the pork will not be overcooked.
