Marinate the minced meat with all the seasonings and leave it for 15 minutes.
Beat the eggs and add the 1/4 tsp of salt. Mix well.
Wash the spring onion and cut into small pieces.
Add spring onion to the eggs.
Cooking Method
In a wok, add the 1 TBsp of oil over medium heat. Add in the garlic and fry till aromatic but not burnt.
Add in the minced meat and stir fry until cooked, for about 2-3 mins.
Put the cooked minced meat into the beaten egg and mix well.
Wash the wok. Add the 1 tsp of oil in the wok. Use a Chinese soup spoon, scoop 2 soup spoons of the egg mixture into the wok and fry for 1-2 mins.
Fold the omelette in half by flipping one side over to form a semi-circle pouch, then continue to cook for another minute. Next, flip the omelette to the other side to lightly brown. Transfer it to a plate.
Repeat the same process with the remaining egg mixture until all the egg is done.
Garnish with parsley and serve hot.
Notes
It is better if you buy lean pork and mince it yourself, rather than buy ready-minced meat from the supermarket which usually contains lots of fats.
You can replaced the minced pork with minced chicken or minced beef.
If you want the egg purse to be more browned, you can leave the cooked omelette pouch by the side of the wok while frying the rest of the egg, but please remember to flip it over the other side too so that the omelette won't get burnt.
